Proctor high school Culinary Arts students were in St. Paul on Thursday, 3/14 competing in the 2024 MN ProStart Competition. There were approximately 50 other teams they were competing with to earn a trip to the National competition in Baltimore, MD. The menu that the team has 60 minutes to prepare included: Appetizer - Shrimp Dumplings on Bonita Broth (Scallions, Chili Oil, and Watermelon Radish); Entree - Vegetarian Seared Tofu Curry (Red Vegetable Curry, Yuzu Vinaigrette Slaw with a Cilantro Lime Cracker); Dessert - Almond Grapefruit Cake (Orange Vanilla Custard and Candied Grapefruit Supreme).
